I chose Gluten-Free Spider Web themed sugar cookies. I chose the recipe because sugar cookies can be made into any holiday shape. They are fun to eat and easy to make. I chose gluten-free cookies because part of my family is gluten-free. The recipe came from The Best-ever Wheat and Gluten-free Baking Book.
Wet ingredients:
2 sticks butter, melted
1 egg
4 tsp. molasses
1 tsp. vanilla extract
Dry ingredients:
2 cups (320g) rice flour
½ cup (60g) tapioca flour
1 tsp. cream of tartar
½ tsp. baking soda
½ tsp. salt
2 tsp. nutmeg
2 cups (200g) Gluten free confectioners’ sugar
Preheat oven to 350 degree F. Spray cookie sheet with oil. Mix wet ingredients together in a large bowl. Mix dry ingredients together in a separate bowl. Blend wet ingredients into dry ingredients a little at a time until well mixed. Drop dough by spoonfuls onto baking pans. Bake at 350 degrees for 10 minutes until slightly brown around the edges. Let cookies cool on pan. Then remove them to a flat plate to decorate with gluten free frosting and have fun.
