Peppermint Mocha Cupcakes

I have decided to make them since I have never made before. They sounded very good, I hope I enjoy them and I also hope that you will make them and enjoy them too.It’s always good to try something new, you never know you might just fall in love with it.      
  • ½ cup unsalted butter
  • 2 ounces semi-sweet baking chocolate
  • 1 heaping tablespoon instant coffee
  • ½ cup unsweetened cocoa powder (not dutch processed)
  • ¾ cup all purpose flour
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼  teaspoon salt
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ½ cup buttermilk


Peppermint Vanilla Frosting
  • 1 cup unsalted butter softened to room temperature
  • 3-4 cups powdered sugar
  • ¼ heavy whipping cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
*Salt to taste


Directions: Preheat oven to 350 degrees
                 Melt butter and chocolate together in microwave.Stir and combine then mix instant coffee. Set aside to cool.In a bowl toss cocoa powder,flour,baking soda,baking powder,and salt together. In a large bowl whisk eggs,sugar,brown sugar,vanilla extract and,peppermint extract together until smooth.Add butter/chocolate and whisk until smooth. Add flour mixture then half of the buttermilk.Repeat until everything is combined. Bake for 18 minutes.Allow to cool completely before applying frosting.
Frosting directions: Beat softened butter until smooth and creamy for approximately 3 minutes.Add powdered sugar,cream,vanilla and peppermint extract. Increase mixing speed to high speed for about 3 minutes Add powdered sugar if frosting is then. Add cream if frosting is too thick.Add salt if frosting is too sweet.  

This is a great holiday recipe. I hope that if you make it you will enjoy it as much as I did.
It's not the simplest recipe to make but it's definitely worth it. This recipe could be something you could share with your family and friends. You could make it on any holiday or just anytime. It was delicious. Enjoy!
